Cajun Blackening

A Southern BBQ menu wouldn't be complete without a side of fried okra. These addictive bites were gobbled up quickly by tasters in our test kitchen. They have a mild kick of heat from both our Cajun seasoning and Cajun hot sauce. They also have a perfectly crunchy cornmeal coating, which makes them gluten-free too!

Our version of red jambalaya is enhanced with Cajun Blackening Seasoning to add a warm Louisiana flair to the perfectly crisped rice.

Blackening isn’t about burning the chicken surface to a crisp, but rather about creating a charred crust of spices. We coat chicken with butter, and as it heats up it “glues” the spice crust to the chicken and help keep it moist inside—even though you’re cooking it over a very high heat.

This recipe has been a favorite here at the Savory Spice Test Kitchen! It is has an incredibly delicious Cajun flavor with awesome texture from the crispy rice. Don't be intimidated by the long recipe–it is totally worth it!

Everything's better deep-fried, including shrimp. We elevated fried shrimp with our Cajun Blackening seasoning, an earthy, aromatic blend reminiscent of the flavors of the south. Enjoy these crispy bites loaded in a taco, layered over fresh pasta, or dipped in mayonnaise and eaten solo.

Don't be intimidated by the salt plate! A creative spice merchant gave us this super easy method for cooking succulent shrimp right on the salt plate, either on the grill or in the oven.

Boiled peanuts are a traditional southern snack food found throughout North and South Carolina as well as other states across the south. They're soft and salty, and nothing like a roasted peanut. The best ones can be found at roadside stands, where they've been bubbling away for hours in huge stockpots. This is our version for making them at home.
